The latest version of Inkscape seems to have broken the Preview function as compared to version .92. In .92, when I select import a file and I select a file, the image preview is shown. This is very useful when you have a folder of images with names like img_0001.jpg thru img_1000.jpg. However, when I installed versions 1.0 and 1.1, the image preview does not work making it very difficult to locate the image I want to import.
Is there a setting or something I am missing? Or is this a bug? I could not find anything in the forum mentioning this.
If that is the case, why does it work on my OS with the previous versions of Inkscape. .92 works just fine and previews the image files and I did not change my OS.
Windows 10 can't natively show you svg previews or thumbnails and Inkscape doesn't provide this. Something else on your system is providing the service.
First of all, I should have explained that I a MAC user, not Windows. I am running MAC Mojave 10.14.6. And yes, I have used Inkscape for years myself. The preview function got broken when the 1.0 release came out. Still has not been fixed in 1.1. I would love to use 1.1 because it has some great features like setting the Y axis to the upper left instead of the lower left, but I hate to give up the preview feature so I have reverted back to .92 hoping it will get fixed in the next release.
Svg thumbnails work fine on my old (2012) MacBook Air running Catalina, but my friend Google tells me you're not the only one to suffer this malaise.
Finder thumbnails are generated by Apple's QuickLook application (https://en.wikipedia.org/wiki/Quick_Look) and svg is one of the built-in file types. Many applications provide plug-ins for their own file types but not Inkscape. Probably something else broke your thumbnails. A few forums mention Google Drive (e.g. https://discussions.apple.com/thread/8566603). If you find and remove the offending plug-in then normal service should be restored.
One possible cure is installing Gapplin (http://gapplin.wolfrosch.com). This svg viewer extends Quicklook thumbnails to include svgz and animated svg.
Now I understand! You're looking at the [File > Open] & [File > Import] dialogs. My preview pane renders svg images correctly but like yours shows nothing for jpg, png, pdf, etc. I never noticed before because I generally use Finder to browse through files.
It seems that Inkscape's internal file browser doesn't use the underlying macOS image interpeters but the old XQuartz version does (or else they were packaged with the application). I've reached the limit of my knowledge here and I now yield the stage to a real expert.

The preview of files is controlled primarily by the OS.

I've used use this little gem for years now. https://github.com/tibold/svg-explorer-extension
Also Microsoft PowerToys includes a file explorer plugin for svg previews, but I haven't tried it myself. https://docs.microsoft.com/en-us/windows/powertoys/file-explorer

Maybe @PixelPest / @Polygon can chime in, as they are a longtime Mac/Inkscape user.

It is not just SVG files. It is PNG, JPEG, the whole gamut. Here is a youtube video showing the two versions side by side on the same OS.

Searching the tracker for preview Mac OS does not find a specific reference.
