How do I crop this image so I just have the circular portion, none of the off color square?

Draw a circle on top matching the outer rim radius - select image and circle and go Object->Clip->Set.
@cborman There's no option called crop, btw, u should follow @Polygon's reply
There is: under Extensions->Raster->Crop - but itΒ΄s just for real rectangular cropping not just clipping or masking..
