I am converting strokes to filled objects by using stroke to path, ungroup, and then union, but it's resulting in a ton of double nodes (one node directly on top of another). If I try to delete the extra node, not only does that mess up the shape but it also creates more double nodes elsewhere along the path. Using the "join selected nodes" button does the same thing.
I have attached a photo of an extra node and another photo of what happens after I try to delete or join it with the node under it.
I am using the latest version of Inkscape on Windows 10, but have tried several earlier versions without luck. I saw another thread where someone suggested changing the transforms in preferences to "preserved" but that isn't helping me.
You are correct, sorry about the confusion. I am usually combining multiple strokes at once, so that's just my work flow to unite everything. But stroking to path on a single stroke is giving me the double nodes.
I have attached an svg with some simple rectangles. The one on the left is the stroke and the one on the right is after I have stroked to path. It has double nodes at the top/middle part of the rectangle.
Okay great, thank you. I am attaching another svg. The first object is the stroke, the second is the stroke to path with a "double" node up at top, and the right object shows how other nodes are doubled if I try to "join" the overlapping nodes.
If you unselect the object and then select it again after you have joined the stacked nodes, you will see that there are new stacked nodes. That is my problem. I join one set of stacked nodes and new ones pop up elsewhere.

A path with a stroke without a fill should not need ungrouping and unioning after stroke to path.
Please share an example SVG file that has this behavior, containing an object before stroke to path is performed.

I did get a duplicate node on the latest file, but it was easily resolved by joining the stacked nodes.

Not reproduced here on Windows Inkscape 1.2.1 (9c6d41e410, 2022-07-14), nor Linux Inkscape 1.3-dev (1:1.2.0-alpha1+devel+202211161438+d40a2dcd0c).
(I'm also using transforms optimized.)
