When I add a path to a current layer, the newly added path has a very dark blue cover over the black text. So dark that I can’t read the black text.
Is there a way to make the dark blue lighter (adjust it’s opacity) or change the color to a different one so I will be able to read the black text?

The easy way is to change the Theme: Preferences>Interface>Theming.
I suggest win32, hicolor icons and disable symbolic icons.
I also make the snapping toolbar permanent on the right side, using the Preferences>Interface> toolbars
