I don't know of any specific videos for that. But you could just dive into Inkscape. If you look in the top-right area of this forum, click on "Learn" and follow through. Those first 3 tutorials are in Inkscape, and are the best place I've found for beginners to start.

I don't know about video, but I constructed a tube-style map for my home town. It's a pedestrian map, so it's certainly possible.
