Hi. Looks like you want a series of stitch-like lines that creates a portrait effect.

What comes to mind is a Voronoi Diagram or Portrait. Which can be made from placing objects at key points on the face of an image and then utilizing the Voronoi extension options. Once this is made you would have to ask an Inkstitch user how to convey that to embroidery.

Look over some videos about Voronoi:

    https://www.google.com/search?q=inkscape.voronoi+diagram+portrait&oq=&aqs=chrome.2.69i58j69i177j35i39i362i524l13.-1j0j9&client=ms-android-verizon&sourceid=chrome-mobile&ie=UTF-8

Also a cool tutorial about designing a lampshade by placing objects (circles) at key points on desired image to create your desired  end result. That is why I mentioned placing repeated objects on a face portrait - such as eyes and nose and mouth etc. - so the Voronoi will generate the lines (intersections) where you properly  want them.

Did you review the lampshade tutorial or view a few of the Voronoi videos?

The video you shared shows an upside down portrait of a  face ...  I suppose made from multiple threads that "compose" together the key elements of a face. Voronoi will create polygons and triangle intersections that can resemble a face or whatever you want to compose. It will be as detailed (or not) as the amount of objects you place and the location of those objects. The resulting pattern ... from a distance can resemble a face or whatever you wish. You have to take the time to compose your desired end result. It is not a 2 step process.

If you want to get create something like the thread like lines that you see in the video ... you can do this by placing as many lines you can draw  down ... or by using Voronoi ... place many objects (circles or other objects) on the key areas of the face.

That is, you could have your source image on one layer... snd then on a layer above that  ... place your circles on the corners of the eyes and nose and mouth and any other details you want. When you use the Voronoi extension... these placed circles will generate intersecting lines that will resemble your targeted face or image.

This link is just one example ... where Voronoi from a different source was made to resemble key features of a Frankenstein creature.

    https://www.r-bloggers.com/2017/03/frankenstein/

You can do a google image search of Voronoi portraits and find other examples.

As I said, you could draw these lines by hand or you could place your circles (objects) over the key locations of your starter image and use the Voronoi extension options to yield three like results. You would still have to consult someone with expertise in Inktitch to yield an embroidery end result. My aim here was to give you a possible means of getting to a thread like portrait prior to needing the embroidery steps.

If you do not want to create a thread like result and not use the Voronoi extension nor manually draw the facial features eith lines ir shapes. I do not know how you could simply do this easily ... if you fo not want to explore the options I mentioned. Perhaps someone else may know that "how" and share with you such details.

I wish you the best as you use InkScape snd InkStitch.

Lastly. This web app may get you what you want ... uding Voronoi process ... from an image to an svg gile.
