Hi, could anyone please help me solve this issue?

By the way, how can I save new settings/preferences that I make to the program for future use? And how can I change the save settings to default settings if I didn't like the settings I saved?

What does  "preferences.xml is not a valid xml document" mean?
What is consider a "valid document"?
    I'm using INKSCAPE 1.0.2 on Windows 10

Just find that file and delete it and it will be regenerated and preferences saved to it. If you'd like, you can open it up and look, there's probably some unescaped quotes or possibly broken tags in the file, depending on how it got that way (e.g. did you edit the file manually). If you're willing to share that file (note that there usually are some file paths in it), we might be able to see what's wrong with it and possibly identify a bug in Inkscape.

You can also run it through https://validator.w3.org/ to identify what's wrong with the file.

Oh and in 1.0.x and later, you can reset preferences in the Preferences dialog, under the System tab, with the Reset Preferences button.

Or you can delete the file again and it will be regenerated. Be sure to have Inkscape closed before deleting the file. In both 0.92.x and 1.0.x, the location of the path is listed in the System tab (I haven't checked older versions but I imagine it'll be the same)
