On Windows:
As Polygon points out, when the Shape Builder tool is operating, the esc key will cancel the selection that is in progress (white outline, mouse button still down).
If esc key is pressed after the mouse button is released (no white outline), the entire operation is cancelled.
Clicking the green button will complete the operation. If there was a mistake, undo should revert to the state prior to the operation.
Thank u so much!..the esc button advice while still clicking the mouse button worked...however, the undo button reverts the whole progress...i wish it would have just deleted the last step only.
I use [ctrl+z] to undo the last step in the shape builder. Undo button in the toolbar reverts your last action on the canvas before starting the shape builder.

Can you try: hold "alt" key down and don`t release left mouse button unless you´re done - when you make a mistake hit "esc" and go one:
idnw it didn't work for me unfortunately..pressing alt did nothing..idnw how u undo ur drawing in ur illustration
Maybe it´s another key on your OS (I´m on macOS) but as you can see I can go back and start over without loosing my former selections.
