I have the Italian version and I am not sure about the English names of the menus.
I reinstalled Inkscape with the msi package found on the official site but it keeps showing this when I select the Text tool! I have no idea why it is listed as custom, I just removed the languages. On the other programs the fonts work perfectly. Active Package it is blank.
Question: Why is it listed if it is not installed? Shouldn't only installed characters be listed? Problem: Even if it would work to change the character at the end of typing, I don't see as I type the result. But I don't think that's what you meant.
True, I notice today that sans serif is strikethrough.

All Windows versions is currently detected as custom (tested on Win 11).
Just change the font when you are done typing (sans-serif is never installed).

I have tried using other font, with this result.
In the case of the third text, I started in Verdana and then changed to Stencil.

However, I restored the basic settings and it took to writing correctly.
Good question. Maybe generic font families will be presented differently in a later version?
