Because you're using a Shape in the Bezier Tool. The "strokes" that are created with a shape selected are not the same as normal strokes when you have "none" selected. This is, I think, because you can edit the shape of the "triangle in" stroke even after you made the line. Go to Node mode "N" and then you can see that the wide side of the stroke has a handle that controls the width of the stroke
I might have misunderstood your initial question What is it exactlytwhat you are trying to achieve, or what exactly is the problem if it is two objects?
Do you want the ability to edit the shape (fill) afterwards and have the stroke move with it? In that case, instead of using the "Triangle In" shape on the bezier tool you might wanna use the "Taper Stroke" Path Effect after you made your shape with the bezier tool with Shape "None"
If I reset preferences and restart Inkscape, I get two paths. One with path effect Fill between many and one with path effect Power stroke.
If I double click the Bezier tool (Pen in preferences) and select This tool's own style instead of Last used style, I get one path with path effect Power stroke.
Looks like this is caused by using default preferences.

Hi,
I tested this with a new extracted (Compressed archive in 7z format (64bit)) latest stable inkscape 1.2 version.
Bezier Tool - Triangle In Video
The bezier tool with triangle in creates two objects.
Why is that so? Bug?
Because you're using a Shape in the Bezier Tool. The "strokes" that are created with a shape selected are not the same as normal strokes when you have "none" selected. It's not working. I can't get rid of the stroke.
In 'Fill and Stroke', I select for Stroke Paint: No Paint
Then I draw it again. The same problem. Two objects.
I've tested this in the latest Development Version of inkscape. The same behaviour.
In inkscpe 0.92.3 it works without any problems.

I just tested #1 using Inkscape 1.2 on Windows:
If I reset preferences and restart Inkscape, I get two paths. One with path effect Fill between many and one with path effect Power stroke.
If I double click the Bezier tool (Pen in preferences) and select This tool's own style instead of Last used style, I get one path with path effect Power stroke.

That's it. Thanks a lot. 😀
Should I do a bug report?
Or is this not a bug?
It is common for things to be wonky with an update to 1.2, because the user preferences intentionally do not get updated.
It is often recommended to use the Reset Preferences button in the System settings after updating to 1.2.
Have you actually tested this, like I did in comment #5?
Nah. I have heard from reliable sources that the same location of preferences.xml is used for almost all versions.
Testing in my environment may have little relation to the OP's.
The advice has proven to be useful much more often than not.
@inkingo, yes please report it if it's not already reported.
Did a bug report:
