I would like to customize the tools on the toolbox on the left of the Inkscape window. In particular, I would like to move the zoom tool button further up.
I am using MacOS 10.14.6 and Inkscape 1.0.
I have looked into Inkscape > Preferences and I could make icons very small, but still the zoom tool did not appear on the toolbox strip.
I'm not sure how themeing works on non-Linux systems for Inkscape, but for me on Linux Mint, using a more compact theme has helped reduce padding issues which were forcing some toolbar icons off screen (and at that point only accessible by a little arrow at the bottom of the vertical toolbars). So maybe look into your options for changing themes for Inkscape on your OS.
I don't think you can arrange specific items in the toolbar. At least not from the GUI or preferences.
To rearrange or remove tools in toolbar on the left you should edit this file using text editor of choice %ProgramFiles%/Inkscape/share/inkscape/ui/toolbar-tool.ui (as stated in Inkscape Wiki).
You're very welcome! This is really handy you've figured out how to solve the issue using Application Support folder without touching app's contents. I guess it's really useful information and should be added to Wiki. However I couldn't find any form to report issue or suggestion for Wiki. No idea except maybe drop them a line at GitLab as an issue. This seems to work for some people and Inkscape team even issued a video on how to contact them using GitLab.

I have copied the
toobar-tool.ui
to my home directory as suchcp /Applications/Inkscape.app/Contents/Resources/share/inkscape/ui/toolbar-tool.ui ~/Library/Application\ Support/org.inkscape.Inkscape/config/inkscape/ui
and edited the file and it works!
