I am using Hershey text to use single stroke fonts for my pent plotter (handwritten text). Is there a way I can add custom fonts to use within the hershey text editor?

What is the 'Hershey text editor'? Have you had a look at the most recent version of the Hershey text extension? It allows you to add your own fonts more easily than previously, according to its author: https://www.evilmadscientist.com/2019/hershey-text-v30/

I don't know about cutting devices, but I have a couple of techniques that could answer your question.

You have to convert text into a path, uncouple it into separate (Shift+Ctrl+G) characters and connect it to the path (Shift+Ctrl+= or Ctrl+NumpadPlus). First, you need to convert your text into a single path. Fill the resulting route with stroke and delete fill.

It seems like I have an idea different from lcm and Moini about the purpose of a single stroke font. If I misunderstood, it would not be the first time. Yet the CamBam font at fontvilla that looks like Hershey Text with lar3ry references.

Perhaps a few more options sell Hershey Text extensions than CamBam.
