I can't really answer your questions about using Inkscape on a Mac. I guess we don't have many Mac users yet. But for the problems you're reporting, they should probably be reported to the team which is building 1.0 for Macs. As far as I understand, you can reach them in their chat channel: https://chat.inkscape.org/channel/team_devel_mac
Or possibly they would like a bug report made? I'm not real sure. But you can ask them which they would prefer in the chat channel.
