Maybe it is the 0%.. Can you try it with 100%? Opacity means non-transparent. So if you use 0% opacity, it is completely transparent. 100% opacity = a completely solid colour.
Are you using 1.0 beta, by chance?Β I was having a similar problem with the Pen tool, with 1.0 beta.Β In 1.0, my Pen tool was drawing transparent lines!Β It was not respecting my Pen tool's custom style, and I had to re-set it in 1.0 beta.
I'm not sure if I've used text in 1.0 yet....Β Maybe I should test?
Otherwise, I agree with Kirstie, the opacity should be 100%.Β 0% means it's completely transparent.
I am having the continual problem that I type text and I make sure it is on 0% opacity.
I select the text. I try to will it with color, but I can't see it.
The text, when i write it, is invisible and any attempts to fill it with color are useless.
Also: in the "Fill and stroke" section, it shows as if it does have a color, but the text is still invisible.
Changing the font will not resolve it.
In Object properties, the "Hide" box is NOT checked.
It used to work. I used to just be able to work with font in my designs.
If i go to "view" and go to outline, I can see the text.
Update: I can't even fill shapes any more. What is going on here?
Please help.

Hi diver_234
I have installed Inkscape 1.0 and have the same issue. I found out solution (but I'm sure it's the bug):
1. Select the object shape (close path).
2. Select "FIll and Stroke" then at tab "Fill" select "Linear gradient" .
3. After you will see the fill color, then select againΒ at tab "Fill" select "Flat color" .
Voila you can see the fill color. Hope it will help

Adri.satria, I'm having that problem with any shape. Your fix works, and I thank you for that, but that extra step is nonsense. Obviously a bug!
I had the same problem with the invisible fill of text. The solution of adri.satria works fine.
Obviously a bug.
