I too use a mac but (luckily) I have no problem resizing Inkscape's windows. As far as I can tell, it works like every other application, i.e. click+drag the window edges and corners, Do you see this problem with other programs?
i still have this issue - Mac 13.0.1. Inkscape Inkscape 1.2.2 (b0a84865, 2022-12-01). Its very annoying. Works sometimes and not others. I've seen comments about the problem with 2 windows open, but I have this issue with only 1 window open. same thing occured before I updated to macOs 13. I have a Macbook air M1 2020
I can't help, but I can confirm that this happens on my Mac too. I'm on MacOS Ventura 13.1 but I don't think the Inkscape has ever been right on my Mac. Behaviour such as resizing windows, tabbing between windows and copying and pasting items between them is irritating to the point that I'm seeking an alternative - as much as I respect Inkscape's capabilities.
Do not update to macOS Ventura if you rely on Inkscape! There is an unresolved issue that currently affects all GTK3 based apps on macOS Ventura, making the app unresponsive to certain mouse events. (GTK is used by many different programs, and builds those programs' user interfaces for you to interact with.)

I am struggling to get the UI to a manageable size. The behavior is very unpredictable.
I am on version 1.2
I am on Mac OS 12.5.1
I have an mx anywhere wireless mouse and a wacom tablet.
I can sometimes grab the side of the panel and pull wide and sometimes pull down or diagonally from the lower right-hand corner.
I do not see anything in the corner of the panel (like a handle or something).
I do see the "pull or resize" handles flicker- but irritatingly- never on the panel and they flicker too briefly to do anything.
Sometimes I can grab and resize, often it does not. I have not figured out the magic that I am performing when I am able to do it.
I do not like when the window fills the entire screen.

This problem is unique to Inkscape.
I use several other programs, like photoshop, and do not experience this issue.
Hoping someone has an idea about dealing with this- it is debilitating.
No problem here resizing the Main window, in Linux and Win.
What resolution are you running the display?
