How can I slightly bend a straight line starting exactly from the middle so it's symmetrical? 

Here's one way:

Use node tool, add a node in the middle of segment using "+" icon, turn the node to symmetrical (use the dedicated icon), move it while holding ctrl key, move its handles while holding ctrl key too.
