Or is there a way to reset the style of path/object to the default?

No - unless you go Preferences->Reset Preferences.
Instead I´d take an object where I adjust the colors, stroke width and with it selected click on the certain tool icon which will open its properties and hit "Take from Selection". This will be your next "default" setting unless you change it again.
