I wonder why "Stroke color" don´t work for you as it normally colors stroke and marker. But in case you can go Extensions->Modify Path->Color Markers… and have a good play with its options.

Extensions -> Modify Path -> Color Markers brings me a popup I don't understand. I can't see how to use this to make the arrow match the line. And if I try things out to see what happens it just brings random results. (eg arrow with different fill and different edge, not matching the line)
WORKAROUND: When adding a new arrow head (Fill & Stroke -> Stroke Style -> Markers) I notice that SOME options for arrows I could add are black and SOME have a color close to the color of the line. That will have to do.
I still rely on macOS BigSur. Not sure you have noticed that note in the download section:

Do not update to macOS Ventura if you rely on Inkscape! There is an unresolved issue that currently affects all GTK3 based apps on macOS Ventura, making the app unresponsive to certain mouse events. (GTK is used by many different programs, and builds those programs' user interfaces for you to interact with.)
Well a download isn´t equal to instalment. But you´re already on the Ventura Highway and regarding Inkscape there´s not so much of an alternative then.
That´s up to you. I for myself never ever would do this since apple tries to release an OS update every year which - by all capacities and development funds and resources they have at hand will give you a green, a very green banana. I even wait with app updates for at least a few days after release - not just one time that an app became unusable and then you have to wait for another one passing through their ridiculous review process.

How do I make the colour/color of an arrow the same as the colour/color of the line it is part of?
The answers I can find online are all for previous versions of Inkscape, and no longer work.

Yes, I did notice the note in the download section.
But that note was in very small font AFTER the big "CLICK HERE TO DOWNLOAD" button.
So by the time I noticed it was too late...
