When you got the second shape did you follow @Polygon's "most likely you need to kill fill colour and add stroke."?
Click on that object, then move mouse pointer to color palette on bottom of screen and right click and set fill to none (X) and choose color for stroke.

Thanks @Polygon for pointing out the Remove Path Effect, will be useful for me in future and @inkingo for original question which showed me a possible problem if I accidentally changed the settings. Still not fully up to snuff on looking at settings in menu bar.

I've made two bezier lines (Shortcut is 'B'). Top bezier line shape is 'Ellipse' and the bottom bezier line shape is 'None'.

Go Path->Remove Path Effect - most likely you need to kill fill colour and add stroke.
Does not work.
When I do this on the top bezier line with the shape 'Ellipse', then I get this:

Ubuntu MATE 22.04 Inkscape 1.2 works here.

No fill - only stroke
You forget to remove Path->Remove Path Effect - Will end in a color filled shape, that´s why: " kill fill colour and add stroke".

I probably do not understand procedures you are using.
Here I draw line with ellipse mode selected
Select line, then Path / Remove Path Effect, set to no fill and set stroke color.
I end up with single line
Your image looks like you missed the first step Path / Remove Path Effect
Maybe upload a svg with just your start image.
The other way around? Add Path-Path Effects->Power stroke.
