I have searched the internet and cannot find out how to select the color white.
I will be using the bezier tool.
I clicked on the colors along the bottom. That didn't work.
I tried all the buttons in STROKE PAINT tab (RGB, HSL, etc), no white found.
Then I clicked on a line, selected STROKE at the bottom, and dialed something approximating white using the WHEEL, but I have to do that for every line ... there has to be an easier way.
Roy here. Select the line that you want to color color. Then Shift-click on the white color swatch in the Color palette at the bottom of the work window. Shift-clicking a color swatch works on the stroke of an object. If your object is a line, Inkscape considers it a path with a stroke, but with no color fill. You don't want a fill with a color. You want a stroke with a color. So, remember that just plain clicking on a color swatch gives you a fill, shift-clicking gives you a stroke (and not the type that sends you to hospital). I hope this helps.

Doubleclick the tool's icon to get to its settings.

Unfortunately, that is not working for me. I created the line with the Bezier tool.
Maybe you should adjust a background color other that the default "white" to see a white line on a white surface:
