Thank you Martin, that is exactly what I am trying to do.
In the 'Text and Font' section I've been highlighting the text that I want to change and choosing a font/size/format etc. however, when I leave the text box and return to my other work, then the text is always the same and the chosen formats are not showing. Am I doing this wrong?
Don't make the selections within the Text tab of the Text and Font dialog. Instead select the parts of the text you want to change on the canvas, using the text tool. Then make your font and style changes either with the toolbar, or with the Text and Font dialog. In the latter case, press "Apply" to make the changes stick (you'll see the text update on the canvas). You can leave the dialog open and select a different part of the text on the canvas if you need to make multiple changes.
Thank you Xav you have solved my problem; yes I was going about it in the wrong way/wrong place all this time. You and Martin have really helped me make my use of Inkscape easier and I am very grateful.
Does the new Inkscape V1 support having fonts of a different type or a different format (eg. Italics and normal etc) in the same text entry?
I have found the last version didn't support this and I needed to do separate text boxes for different fonts or font-formats.
