Easiest way for us to check is: save an example file and upload here. And for you: check Status Bar about your stroke and Fill and Stroke panel for Stroke width.
Thank you for the help.ย Before submitting a file for you, I checked the stroke and fill settings.ย I found the Fill setting was the issue. . I set it to no fill, and the Stroke to 0.1mm. . . All is showing up as expected.ย

I've recently installed version 1.2.2 of Inkscape.ย ย
So far, I have not been able to get the Bezier tool to work like the tutorials say it should.ย
Every time I end the line segment, by either double clicking or hitting the enter key, It closes the shape rather that leaving it a Bezier path.ย
I have "None" selected as the shape type, and "Create regular Bezier path" selected.ย

I clicked the "Reset Preferences" button, and restarted Inkscape.ย
When I re-launched Inkscape, and tried the Bezier Tool again, I get the exact same result. . . It always closes the shape.ย
Can you check the toolbar when the Bรฉzier-tool is selected - especially where says; Shape?
NB that open paths can have fill... that can look like a closed path.

Three points always ends up looking like a triangle.ย
