I had the same exact problem. Running Inkscape 1.0.2 on Mac 11.1. Through a little detective work I was able to resolve this issue. I identified which font Inkscape was using for its default display. I did this by taking a screenshot and using "What The Font" to identify the font. For reference, my font being used was Helvetica Ultra Compressed. From there, I disabled it in Font Book. On the next startup, Inkscape defaulted to a readable, sans-serif font.
