I am having issues with Inkscape functionality. I’m using the latest release on a MacBook Pro that is running Big Sur. I’ve uninstalled Inkscape and removed all traces of the program, settings, and the Ink/Stitch extension to no avail. (Note that I deleted everything two different times. The second time I deleted everything, I did not load the Ink/Stitch extension … there was no change to the missing Inkscape functionality.)
I’ll give three specific instances of functionality that is not working. There may be more:
When I have an ellipse and text and attempt to use TEXT --> PUT TEXT ON PATH, the text completely disappears. Zooming in, using tab to select the text object … none of these result in finding the text
When I attempt to use the EXTENSIONS —> RENDER functionality, I get nothing. There is no menu with the shapes that I could choose to render. When I attempt to zoom in to see if the rendering menu is elsewhere on my screen, I never find the menu, but after several zooms (using the “Plus” key), I get a completely black screen. Zooming back out removes the black screen, but I still see no text.
When using the Ink/Stitch extension, when I attempt to use EXTENSIONS --> Ink/Stitch --> Visualize and Export --> Simulator /Realistic Preview, nothing happens. I should be presented with another screen that shows the simulation. The program does not freeze, it just does not present the proper screen. If I use EXTENSIONS --> Ink/Stitch --> PARAMS, I do get another screen with the parameter settings along with a screen that shows the stitching for the paths that were selected.
Note that this functionality works just fine on my Windows10 PC and on my iMac running Mojave, so I’m confident this is a bug related to Big Sur.
I´m running Inkscape1.1.1 on a M1/BigSur. No questions it has it´s flaws and is still the most crashing app in my Mac History since 1987. I recently found out that some extensions and Path effects seems to expect to work on a layer and not the default new empty file "root" layer which seems not to be a real layer. Before BigSur I had 3 versions of Inkscape (first native from 2015, recent and latest beta) installed and running - not at the same time of course. To use at least 1 current version I had to deleted everything Inkscape related with AppCleaner.app before installing a fresh version. I never used InkStitch extension (which is a monster of 250MB alone) - so I can't help with that. Simple things as Put Text On Path just works as all path effects - for extensions are updated files in one library in the download section available.
Probably not the answer you´re expecting - I am only sharing my experience.

Text on path is so basic I have no clue why this won´t work for you. As I said I had to get rid of any earlier installments of Inkscape from the Library/System and I´m not sure you found everything and deleted files from org.inkscape.Inkscape.savedState, org.inkscape.Inkscape.plist, Application Support/org.inkscape.Inkscape etc.
At least try Preferences->Reset Preferences and restart Inkscape.
