Hi, first of all, I love Inkscape! But I desperately need help with some weird font handling, which has happened to me for quite a while.
Check the GIF below. There is text written in Futura font. I want to change the text, so I select it, push Ctrl+A to select all, hit Backspace to delete it, and start typing different text. The font changes to Steelfish. I don´t know why it picks Steelfish font at all. The workaround is to keep the first letter of the word, delete the rest, write what you want, and then delete the first letter. It´s so annoying it drives me crazy. I think the correct behavior would be to retain the set font without changing to default or any other one.
My next biggest gripe, while working with text, is font selection in the text tool. After opening the document for the first time I have to open it twice to see the font previews. After opening the list I can´t type to search. I have to select the font name first, delete it, and then start typing to select a particular font. After opening the list, hitting any key should initiate a font search. Pretty much the same way as in the Text and Font panel.
So, what do you think? Is this a bug or intended behavior?🤔 If you could somehow fix this it would make my work that much easier. 😄

I am running Windows 10 x64 Pro 21H1 ver. 19043.1110. As for extra devices, I have a Gaomon S620 Tablet.
I use official installation packages from inkscape.org - my version of Inkscape is Inkscape 1.1 (c68e22c387, 2021-05-23).
If I remember correctly this bug was introduced around v 1.0, that´s why I stuck to v0.92 until the release of v 1.1. It is also very unpredictable and doesn't happen every time. I might try to delete my current settings and revert to default ones.
My system is very similar, albeit older... MSI, Intel i7 64bit 4core HT, SSD, 32GB ram, Nvidia GeForce. (MSI GT70 Dominator) Win 8.1.
I also used .92 until 1.1... only updated a couple of weeks ago.
I used the .msi installer. All my fonts are on the system drive, no additional font directories.
I recall the font list being sketchy for a long time. The issue with the default font is new to me.
I'd rename your preferences.xml to preferences.old, relaunch Inkscape and see if the issues persist. Some wacky behavior is seen when using a preferences.xml from earlier versions.

I cannot reproduce the issue using v1.1 (Win and Linux).

Ok, I did just that. I have a project to do later this week so I will test it out and report it here.
