Can't find in settings there to turn off path closing on Path Difference boolean operation
I rekon that's how it works... I'd use Cut path and delete the unwanted portion.
But if the lower path is unclosed at start you get closed at finish,And i'm sure that this was not the case before.
Boolean OPs are "spape" based in 2D and 3D.
Can you otherwise show a before and what you expect after Path->Difference from your objects?

You still don´t share what you like to have as a result - just showing what every SVG editor does with Boolean Subtract/Difference on opened Path like here in Affinity Designer and Vectornator representative for other:
And here in Inkscape with shapes:
I don't recall it ever working differently than this.

My experience has been: division makes closed paths, CUT makes open paths.
