Okay. I have solved this problem. Since I'm new to Inkscape and didn't have anything I think I'd miss, I did a "Reset Preferences" (instructions in pinned post authored by TylerDurden) and that solved the text box issue. Thank goodness!!

I solved this a reset (so new to Inkscape so I didn't have any templates or what not that I created that would have been lost) but has what I pictured in comment #1 happened to anyone before? I'd like to know how I may have caused that and how I can fix this in the future if it happens again.

this is how all my text boxes looked in my previous document. i love them. and need to have them go back to this

Unfortunately, now when I draw text boxes in my previous document, they all look like the one from my original post above :(
I'm trying not to have a meltdown, but I dojn't know what I did and I'm too new to Inkscape to know the hopefully easy peasy way to fix this.
