I'm afraid Ink/Stitch at the moment is not able to produce a meandering path with equal stitch point distances. It'd be a cool feature request though (you can post one on GitHub: https://github.com/inkstitch/inkstitch/issues).
If there isn't an other Inkscape extension that can produce a path like that, you'd be left with the manual tracing method (which might be a bit too much to do).
