Beyond the Basics How to turn a path back to a fill and stroke?

This was going to be a continuation from my previous post that I was going to move here since the beginner questions section turned out to not be the right one for my issue. I was originally gonna link a google doc that was going to completely expain my problem in full detail with images to help out as well. But while I was doing it, I found out I could just use the pen tool and make the type of arm I was going for, and it WORKED!! The stroke outline didn't fill the top and it actually looked like the arm was behind the body.

There was one problem I had when trying to do this though, and it was the stroke's ends not looking aligned with the body (image 1, the one with black lines on the arm). And since there was no way to fix the stroke on its own, I had to turn the stroke to a path. This did fix the problem and gave me exactly what I needed (image 2, the one with yellow lines on the arm), but now its harder to shape the arm since there so many points I have to manage.

So in order to make my life easier, I'm trying to turn the path back to a stroke (and also have the fill involved). I tried this video, but it didn't really work for me, and just made things a lot harder (I'm probably following the video wrongly so help me out if you can).

Any suggestions/solutions to this problem will be MUCH appreciated, just only reply if you have read this and you kind of understand what I'm trying to do.

And here's the unfinished google doc just for funsies
