I went into the root directory, searched for all things Inkscape and deleted them all. Then, downloaded a fresh copy of Inkscape, reinstalled and Boom! Working. Something in the works was screwed up. And deleting everything and reinstalling, got rid of what was broken.
BigSur is a big killjoy. Under HighSierra I had 3 Inkscape versions running (not in the same time) - but installed. Now I had to delete everything (I use AppCleaner.app for this) to run at least the latest version sosolala.

I know it's probably not an Inkscape problem.
I've renamed the files, deleted the install and reinstalled. Still not working.
Got them working.
