As I understand after much googling, I change the type face by entering the new font size in text and font. apply it and hit default. When I try to change the default type size this way the apply button is greyed out. IF this is not the right way, please let me know.

I have been to every inkscape site that I know of and cannot find this information.

IF I do it in settings,  I cannot find settings..

I am using the latest version on a  windows 10 PC.

I usually set my text using the controls at the screen top, then set the text to default using the Text panel (dialog).

Yes. Those are the direction on the web that I tried. I know that process.  I set the font to 12 both on the top line and on the text and font panel.  The "apply button" is greyed out.  Even though it is "12" in both places when I try to enter text  the "Text and Font Panel reverts to 144.

I cannot paste a screen shot.

Screen shot can be attached using the paperclip icon in the lower left corner. Or the file can be dragged into the text area. Paste is a no-go.

Feel to post a screenshot that includes the status bar while the text object is selected, and sharing a svg file can be helpful.
