While you are drawing, the Pen tool shows the very thin red or green lines. There is no way to change that part. However, after you finish drawing the line (using double-click or pressing Enter) then you can adjust the line all you want.
In my experience, there are very few people who can draw precisely using the Pen tool. Most people draw what they need as close as possible, and then come back later with the Node tool, and tweak it to perfection. In my experience, that seems to be how Inkscape is meant to function. Otherwise, as you've learned, we should be able to see the lines better, and control them on the fly, more than is possible now.
If by chance, you are tracing over a raster image, you could try reducing the opacity of the raster image. That makes it easier to see the red/green lines.

so, is there anyway to change the settings like width and color BEFORE starting the pen tool drawing?
Really is kinda hard to do anything when I cannot see what I am drawing because the pen color and width are wrong.
