I noticed this earlier this year and forgot to post anything about it. Using Inkscape on the Mac and PC, I noticed that there is no numerical angle/degrees input area in the floating fill/stroke window on the Mac version.
Could you check the exact version of Inkscape you are running? You might be using an older version with slightly different UI.
If for some reason you really need to run older inkscape version and can't update, you can also change the angle in Gradient tool and node tool by changing the position of gradient control nodes.

Mac version is 1.3.2
The control nodes were missing as well, as indicated in the screenshot.
To me it looks like in the screenshot you have the Selector tool active not the Gradient or Node tools.
