Someone in the shop created a laser engraving job and the lettering is all  outline with a path. How can I turn that off as when I want to engrave it it also cuts out the letters

Could be a language issue here - what do you want to turn off? Color is engrave and stroke is a cut?

Its the stroke around the letter that I want to get rid of.

Why is there a Stroke in first place? Text is Color filled shape normally. Go Fill and Stroke panel->Stroke paint and turn off by hitting the "X" or hold shift and hit the "X" at the Color swatches bottom left.

I double clicked on the text button and brought up the Preferences panel clicked on Test and at the bottom The This tool's own Style was checked and the Fill set to Unset  but the stroke is set to red. If I can get the red out of there that should clear it I would expect but not sure. I have submitted another topic on this.

Select your text using the Text tool [t] (or Select tool [s] or Node tool [n]). Now open the Fill and Stroke dialog [Object > Fill and Stroke...] or [shift+ctrl+f]. Go to the Stroke Paint tab and click [x] to remove it.

I recommend reading through [Help > Tutorials > Inkscape: Basic] for a good introduction to fill and stroke formatting.
