I've searched but I'm probably not using the correct terms. I want to make a black box and have it cut around text, basically cut the letters out of the black.

Using the rectangle tool, draw your rectangle (box) shape. Now select the text tool and type your text. Position the text where you want it on top of the rectangle. Now click on your text, hold Shift then click on the rectangle, so that you have both selected. Then, go to the Path menu and select Difference. This will cut the shape of the letters out of the rectangle.
