Some of the investigators told that this could be a "Font cache" problem - I doubt that this issue still exists in 2021. Again: I´d use AppCleaner.app to deinstall Inkscape completely especially when former versions were installed - shut down Mac (not just reboot) start Mac and install Inkscape again. Fingers crossed.
InkScape v.1.1 MacOS 10.15.7 Catalina on a - MacBook Pro + w/ External Monitor
The DMG file Worked fine... it installed fine... It launched Fine... 'Cept the interface Fonts display like its on acid :)
Read some advice on the web:
Ok so I have tried putting all my fonts into the hidden ~ Admin ~ Library ~ Fonts Folder. Then restarted. That didn't work.
I then purged the app with CLEAN MY MAc X and reinstalled it. That Didn't Work.
Please help its driving me mad - I want to try the Ink Stitch Extension and see if it works well.
I have included screengrabs of the issue and where I downloaded the DMG file from.

Man, it took a long time but it was DA DA Daaaaaa - Helvetica Fraction.
All seems to be running well. Some powerful features built in... Super excited to use it with InkStitch, though it's a helluva learning curve for me.
Did this smoke effect design just messing around... I think this filter was called InkBlot...
Ink or not, it makes a damn good smoke effect.
